Happy New Year! I don’t know how another year has gone by already but 2013 was definitely an adventure for me. Looking back to exactly one year ago, my life was quite a bit different than it is now. But it’s definitely different in good ways, so I’m not complaining one bit.

Have you seen that Instagram app, Flippagram? Seriously SO cool. If you’re not familiar with it, it creates a video with music, a slideshow of your pictures. I just discovered this magical app a couple of days ago and I’m hooked. I can’t stop making videos. Looking back through my old photos though got me thinking about some of my most memorable moments from 2013. Somewhere in the top ten, or more like top two, is starting Creme de la Crumb, a decision that has completely changed my life. So I must say, thank you to my readers. Thank you for listening to my crazy kitchen stories and rants about life, really you are amazing listeners. 🙂

Also in my top ten moments would be riding Indiana Jones 5 times in a row at Disneyland (love the off- season), buying a money pit (aka home), and finally conquering my fear of cooking with yeast. Like I said, it’s been one heck of a year.

This Sweet Paprika Chicken is a new favorite at our house! Sweet and savory with a little kick! It comes together so fast and it only requires FIVE ingredients. That’s a quick weeknight dinner fix if I ever heard one! You can add all sorts of things to this dish if you’ve got them lying around the kitchen. I served this chicken over steamed white rice with some lime wedges, mango slices and a few sprigs of fresh cilantro. So yummy! Put this on your regular rotation for go-to quick and delicious dinners, it’s incredibly easy and the flavors are amazing!

Sweet Paprika Chicken

Ingredients 

  • 4 boneless skinless chicken breasts, pounded to about ½ inch thickness
  • 2 tablespoons brown sugar
  • 1 tablespoon paprika
  • 1 ½ teaspoons salt
  • 1 teaspoon garlic powder
  • optional: fresh mango slices, lime wedges, fresh cilantro, rice

Instructions 

  • Whisk together brown sugar, paprika, salt, and garlic powder in a small bowl. Use hands to rub the spice mix generously onto both sides of each chicken breast. 
  • Preheat a large pan or nonstick skillet over medium heat. Spray with cooking spray. Add chicken breasts to pan and cook 4-5 minutes each side or until cooked through and juices run clear. Serve with steamed rice, mango slices, lime wedges and fresh cilantro if desired.

Notes

Top with fresh, slice mangoes and fresh cilantro.

    Love the recipe. Totally fuss-free. I used freshly-minced garlic instead of garlic powder. Also halved the sugar and still it tasted so good.
