This Pizookie Skillet Cookie recipe is one big ooey gooey cookie with chocolate chips baked in a cast iron skillet and topped with vanilla ice cream!

Pizza Cookie Perfection: This pizza cookie, aka pizookie, is a giant skillet cookie that is the perfect dessert for a family or a couple of friends to share! I made a peanut butter oatmeal chocolate chip cookie here. So it has all the best of every single kind of cookie in one!

Easy to Make: If you have ever enjoyed a pizookie cookie at BJ’s restaurant, you know just how delicious they can be. But you don’t have to go out to enjoy one these cookies! Make it easily at home instead. This cookie dough is super easy to make, and can be made ahead of time! Or, double the recipe and keep half of it frozen to have a pizookie skillet cookie whenever the craving hits!

  • Flour: All-purpose flour works great here! To make a gluten-free pizookie, you can use a gluten-free replacement flour.
  • Butter: Use room temperature butter! This is essential to being able to cream the butter and sugars together.
  • Chocolate Chips: I used semi-sweet chocolate chips here. You can use dark chocolate or milk chocolate instead!
  • Ice Cream: The best way to serve a pizookie is warm with a scoop of vanilla ice cream on top!

Here’s How to Make It

  1. Preheat & Prep: Preheat the oven to 350 F and spray a 9 inch cast iron skillet with cooking spray. (not pictured)
  2. Measure Dry Ingredients and Cream Butter & Sugars: In a medium bowl, combine flour, baking soda, salt, and oats and stir to combine. In a larger bowl, cream together butter and sugars until light and fluffy. You can use a mixer or a wooden spoon. (photos 1-2)
  3. Make Dough: Add peanut butter, egg, and vanilla and mix well. (photos 3-4)
  4. Add dry ingredients to wet ingredients and mix until just combined. (Photos 5-6)
  5. Stir in oats, then chocolate chips. (photos 7-10)
  6. Place Dough in Skillet: Gently press the cookie dough into the prepared skillet. Leave about 1/2 inch around the outside of the dough to allow for spreading, and make sure your cookie dough is not taller than the skillet, since it will rise. (photos 10-11)
  7. Bake: Bake 25-35 minutes until an inserted toothpick comes out clean. Serve warm, with vanilla ice cream! (photo 12)

  • Switch up the toppings! You can top it off with creamy vanilla ice cream or opt for a dessert sauce like caramel sauce or chocolate sauce! You can sprinkle it with extra chocolate chips, nuts or even m&ms for added texture and sweetness.
  • Don’t over mix the dough! As with any cookie dough, it is important not to over mix the pizookie dough once the flour is added to the mix. Simply combine the ingredients until the mixture is just combined!
  • If you don’t have a cast iron skillet, you can make this easy pizookie recipes in a cake or pie pan instead!
  • To make the cookie dough ahead of time, prep the cookie dough and place in a bowl covered in plastic wrap. You can store the dough in the fridge for up to 3 days before you bake it!

Can I make mini pizookies?

Definitely! If you have mini cast iron pans, you can divide the dough between four 6 inch cast iron skillets and have four individual pizookie skillet cookies instead. Keep an eye on the cookies since cooking time will decrease.

How should I store leftover pizookie?

Store any leftovers in an airtight container at room temperature for up to 1 day, or store in the fridge for up to 4 days! You can reheat the cookie in the oven until warm and serve with more ice cream!

Ingredients 

  • 1 ¼ cups flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup old fashioned oats
  • ½ cup butter, softened
