White Chocolate Chip Skillet Brownie – One big chocolate brownie, loaded with melty white chocolate chips, then baked in a skillet!
Why. Why are chocolatey skillet-baked dessert things so easy to make? Sounds counter-intuitive but they make my life harder. Because I have no self control! How can I resist eating the entire thing? I mean, it’s just one big brownie so I can say afterwards, “Oh I ate a brownie…”. But let’s be honest. You and I know it’s more like ten brownies. Ten delicious, fudgey, chocolatey, gooey brownies.
If you’re like me, and have no self control around fudge-y gooey chocolatey dessert things, you should invite someone to make this with you. Or at least have them plan to arrive around the time it’s coming out of the oven so that you don’t have to deal with the baker-brownie-stare down. My favorite way to have a skillet cookie or brownie is to eat it while it’s still warm from the oven, topped with a big (or several big) scoops of creamy vanilla ice cream. Ahhhhhh, do it! Yum, yum, double-yum.
And if you “accidentally forget” to invite someone to share this with you, it’ll be our little secret.
White Chocolate Chip Skillet Brownie
Ingredients
- ยฝ cup butter - softened
- 1 cup sugar
- ยผ cup brown sugar
- 2 eggs
- 1 ยฝ teaspoons vanilla
- 1 ยผ cups flour
- ยผ cup unsweetened cocoa powder
- โ cup white chocolate chips
- optional: vanilla ice cream
Instructions
- Preheat oven to 350. Spray a 9-inch cast iron skillet with cooking spray.
- In a large bowl cream together butter and sugars. Add vanilla and eggs and mix til smooth. Mix in flour and cocoa powder. Gently stir in white chocolate chips. Spread batter evenly into prepared pan (don’t over-fill!).
- Bake 25-30 minutes or until an inserted toothpick comes out clean. Remove from oven and allow to cool slightly before serving. Top with vanilla ice cream if desired. Enjoy!

can you do the same with a brownie box mix or does it make a different amount of brownie batter?
Hi Cierra, I haven’t tried this technique with a boxed brownie mix so I can’t say for sure. It wouldn’t hurt to try it! I would prepare the batter and only pour as much of the batter as needed into the skillet. I’m sure that the box mix will make more than is needed. As it’s difficult to tell how much the box brownies will “rise”, I would suggest placing a sheet of tinfoil on the rack before baking, just in case you get some spills! If you try this, let me know how they came out!
