Gooey browned butter blondies stuffed with Snickers and Rolos, then topped with a chocolate chip cookie layer! These bars are INSANELY yummy!
How was your fourth of July?? Did you eat hoards of delicious summertime bbq grilling and 4th of July foods? We had a bbq with my husbandโs family the night before the 4th because we went up with my family to the cabin for the rest of the weekend. Iโve eatenโฆ. too much the past few days. It all started with those super saucy bbq pulled chicken sandwiches we had with my husbandโs family. The homemade bbq sauce plus the crunchy slaw is soo good. Oh and those red white and blue crinkle cookies. Yumm-o.
When we go to the cabin, half of our activities are centered around the outdoorsy type things. The other half of our time is spent eating. No really. When my mother packs food for the cabin, she packs to feed an army. Thatโs kind of how she does everything though, way over the top, better safe than sorry, and all about the options. What if not everyone wants frozen pizza for dinner? What if some people want turkey and ham on their sandwiches instead of chicken and pastrami? Four kinds of salsa, 7 kinds of chips. Soda pop of every kind, plus two brands of OJ and both 2% and skim milk. For two days people, two days.
But my mom is a crazy-good cook. I helped her prep our tinfoil dinners the day before the trip. Have you had tinfoil dinners? I think some people call them tv dinners too but I always relate โtv dinnersโ to those frozen dinners in the plastic trays you heat in the microwave. If you havenโt had a tinfoil dinner, youโre missing out. Basically you put hamburger meat, potatoes, and veggies in big piece of aluminum foil, wrap them up and cook them over an open fire. Technically you can do them in the oven or on the grill, but they are best over a campfire cause you get that unbeatable smoky taste.
This time my mom made a couple with chicken which were amazingly delicious, I think I might opt for the chicken next time instead of the hamburger patty. And my favorite is when the potatoes get a little blackened. Normally I donโt like burned food (my crazy sister loves all of her food burned โ yuck) but I love a little bit of char on my potatoes and zucchini in a tin foil dinner. Mmmmm.
Okay and these bars? WOAH. Hoooooold everything, put down whatever you are doing, call off all of your plans and make these brownies. Seriously, you cannot live another moment without them in your life. They start with a dense brown butter blondie bottom, stuffed with Snickers candy bars and gooey caramel Rolos. Amazing right?? But wait, that’s not it, there is more. Top all of that goodness with a chocolate chip cookie layer. Say whaaa?! Yes. This is happening right here right now. Now go on, get started on these babies, your mind is about to be blown. Oh and the name, Kerplunky Bars? No clue. That’s just what came to my mind when I made these. And when you take your first bite, you’ll understand.
Kerplunky Bars
Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- ยฝ teaspoon salt
- 1 cup butter
- 2 cups brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 12 snack size snickers - each cut in half
- ยฝ cup rolos - unwrapped
Chocolate Chip Cookie Layer
- โ cup sugar
- โ cup brown sugar
- ยฝ cup butter - softened
- ยฝ teaspoon vanilla
- 1 egg
- 1 โ cups flour
- ยผ teaspoon salt
- ยฝ teaspoon baking soda
- ยฝ cup chocolate chips
Instructions
- Preheat oven to 375. Line a 9×9 inch baking pan with foil and grease with cooking spray. In a medium bowl whisk together flour, baking powder and salt.
- Melt butter in a medium sauce pan. Cook over medium heat 4-5 minutes until butter reaches a golden/amber color. Add melted butter to a large bowl and add brown sugar. Mix until smooth. Mix in eggs and vanilla until smooth again. Add dry ingredients to wet ingredients and mix until just combined.
- Spread mixture in the bottom of prepared pan. Gently press roll candies and chopped snickers into the batter. Bake 25-30 minutes until an inserted toothpick comes out mostly clean.
- While blondie layer is baking, prepare cookie layer. In a medium bowl combine sugars and butter and mix until fluffy. Add egg and vanilla and mix until smooth.
- In another bowl combine flour, salt, and baking soda and whisk to combine. Add dry ingredients to wet ingredients and mix until just combined. Gently mix in chocolate chips. Cover and chill until blondie layer is finished baking.
- When blondie layer is done baking, remove from oven. Drop tablespoons of cookie dough onto the blondie layer until covered in cookie dough. Return pan to oven and bake another 10-12 minutes until cookie layer is set and lightly golden brown. Remove from oven and allow to cool completely before cutting into bars. Store in airtight container up to 1 week.
