This Cowboy Caviar party appetizer is always a hit! Healthy, loaded with fun flavors, and SO easy!

I’ve never tried actual caviar, as in, the fish egg appetizer. I’ve had fish eggs on top of some to-die-for sushi rolls though and I managed to swallow that without gagging so I wouldn’t be completely shocked if I was okay with fish eggs on a cracker. In my mind though “caviar” is somehow inexplicably linked to escargot. Yeah, the snails.

But then escargot always makes me thing of my sister, but for reasons much more clear than the connection between caviar and escargot. My sister ate snails straight from the garden. I kid you not, she really did…. 35 years ago and we neeeeever let her live it down.

Come on though. She ate snails.

Now let’s talk a less fishy, less snail-y appetizers. Cowboy caviar. I LOVE it. I love the taste of it, almost as much as I love how easy it is. It honestly takes 5 minutes to make. Actually maybe 3 minutes. Depends on how fast you can use a can opener. And it disappears almost as quickly as you can make it. I may or may not have eaten a few servings straight from the bowl. If you have the self control to wait long enough to grab a bag of chips, definitely do that. But if you’re like me, a spoon will do just fine.

Cowboy Caviar

Ingredients 

  • 1 can black beans, drained
  • 1 can pinto beans, drained
  • 1 can corn, drained
  • 1 avocado, diced
  • 2 roma tomatoes, diced
  • ½ red onion, diced
  • optional: 1 jalapeño, finely diced
  • juice of 1 lime
  • ¼ cup cilantro, roughly chopped
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon chili powder

Instructions 

  • Add all ingredients to a large bowl. Stir to combine. Serve immediately with corn chips/tortilla chips, or cover and chill until ready to serve.

Notes

Serve with corn chips or tortilla chips, or serve as a topping for grilled chicken, steak, or on tacos!

    Holy. Cow. For real. I made this for a church function and I would see people just getting bowls of this to eat. I’m glad I made a large batch! I was able to smuggle a bit home for later and I just ate it with a spoon – no lying.
    The cilantro makes this so magical. Let us all sing the praises of cilantro!
