Ingredients
For the Hamburger Steak
- Ground Beef: You can use any kind of ground beef here!
- Egg: Egg will help to add moisture and structure to each of the steaks.
- Onion: I like to grate the onion or make it pretty finely chopped so that it adds loads of flavor but not too much texture.
- Panko Breadcrumbs: Panko breadcrumbs are great for keeping a lot of moisture in the steaks. No one wants dry hamburger steaks!
- Worcestershire Sauce: This is the secret to umami-packed meat!
- Yellow Mustard: A bit of mustard adds a slightly tangy flavor.
- Seasonings: Garlic powder, onion powder, salt and cracked black pepper are all you need to season your hamburger steaks to perfection!
For the Onion & Mushroom Gravy
- Mushrooms: You can buy pre-sliced mushrooms or slice them up yourself! If you aren’t a mushroom fan, feel free to make this without mushrooms and you’ll have a delicious onion gravy.
- Butter: Butter will first be used to sautรฉ the mushrooms and then you’ll add some more butter at the end for a silky smooth texture!
- Onion: You can use white or yellow onion, and slice into thin slices.
- Salt & Pepper: Add salt and pepper to taste!
- Flour: Flour will thicken up the gravy perfectly.
- Beef Broth: I used low-sodium beef broth but you can use whatever you have on hand and adjust the extra salt accordingly.
- Worcestershire Sauce: A dash of Worcestershire sauce adds a hint of tang and some extra umami flavor!
Here’s How to Make It
Step by Step Instructions
- Combine Hamburger Ingredients: Combine all of the ingredients for hamburger steak in a large bowl and season generously with salt and pepper. Shape into 8 patties and chill in the fridge while you prepare the ingredients for the gravy. (photos 1-3)
- Pan Fry: Heat the oil in a large, lidded non-stick frying pan or shallow casserole over a medium high heat. Once the oil is shimmering, working in batches, brown the hamburger steaks on each side. Set aside. (photos 4-5)
- Start Gravy: Add 1 tbsp of butter into the same pan and cook the mushrooms until browned. Remove with a slotted spoon, and set aside. (photos 6-7)
- Cook Onions: Reduce heat to low, and add the rest of the butter. Add the onion along with a generous pinch of salt and gently fry for 10-15 minutes until soft and very pale brown. (photo 8)
- Add Remaining Ingredients: Stir in the flour and cook for a minute. Gradually stir in the beef broth, followed by the Worcestershire sauce. Stir the mushrooms back into the pan and allow the gravy to simmer, uncovered for 5 minutes. Season to taste with salt and pepper. (photo 9-11)
- Add Hamburger Steaks to Gravy: Arrange the hamburger steaks in the gravy. Turn the heat up to medium and simmer, with the lid on, for 10 minutes until just cooked through. (photo 12)
- Serve: Serve with mashed potatoes and freshly chopped parsley, if desired. Enjoy!
Expert Tips
- Don’t overwork the hamburger mixture! Mix together the hamburger steak ingredients until just combined. If you overwork the raw meat, it could become dense and tough!
- Form flat patties! The patties will expand when they are cooked, so make as flat of patties as you can.
- Serve your hamburger steaks and onion gravy with mashed potatoes and a side salad, or try it with a baked potato and roasted veggies!

Soo soo good! I added a little spice to it and it turned out perfect ๐
Every bit as good as they look! The patties came out really soft, all the flavors are good. I would make these again. Easy to make but does take a little long for a weekday dinner. I did not use the onion powder bc I donโt have it and I think the grated onion was plenty.
One question: do you drain the fat before cooking the mushrooms? Recipe didnโt say to so I didnโt, which I think makes adding butter to the pan at that point really unnecessary.
No, the oil is not drained and the butter is also added. You don’t have to have both, however, if you don’t want to. The steaks should still turn out ๐
