Well, I’m obsessed. This grilled side dish is PURE MAGIC.
Potatoes are such a popular side dish, and a personal favorite of mine. Growing up we had scalloped potatoes, mashed potatoes, twice baked potatoes, the whole gamut. Baked potatoes have always been one of my favorite variations, because let’s be honest – TOPPINGS. Am I right?
Nothing better than topping a tender, steaming potato with all the good stuff like sour cream, green onions, bacon, and sharp cheddar cheese.
I discovered a way to get that classic baked potato magic on the grill. That’s right, no heating up the oven, no lengthy baking process, and I have to say that potatoes taste 100 times more delicious when they’re grilled.
And did I mention that these are foil packets?? YES! All that yum and the convenience of an easy cleanup foil pack. This is what your Summer needs, I’m tellin ya.
So let’s dig in and I’ll walk you through the process of making these baked potato foil packets.
First – and this is key – toss your potatoes with a little olive oil, McCormick Sea Salt Grinder and McCormick Black Peppercorn Grinder, and Grill Mates Roasted Garlic and Herb Seasoning. This is where the magic happens! Potatoes are a basic, bland starch that take on flavor easily which means a hearty sprinkle of that garlic herb seasoning will really bring those potatoes to life.
It’s flavor you can see – just take a look at those taters up there ^^! I wish you could lick the screen and get a taste of what’s happening inside that foil packet because it is SO GOOD.
Once your potatoes are seasoned, pile them on a a few sheets of foil, wrap tightly and seal the edges to create your foil packs.
Foil packs are incredibly useful for no-mess grilling and creating individual servings. They’re especially awesome for cooking potatoes, locking in all of that amazing GrillMates flavor you just sprinkled on the potatoes so it doesn’t fall off or get stuck on the grill grates.
Once your foil packs are ready, toss them on the grill, turning over every 5 minutes or so ensure even cooking of the potatoes. Once the potatoes are tender and cooked through, open the foil packs to let the steam out, top with all your favorite baked potato fixings, and dig in!

Loaded Baked Potato Foil Packs
Ingredients
- 1 ยฝ pounds baby red potatoes
- 3 tablespoons oil
- 2-3 teaspoons McCormick Grill Mates Roasted Garlic & Herb Seasoning
- McCormick Sea Salt Grinder to taste
- McCormick Black Peppercorn Grinder to taste
- sour cream
- shredded cheddar cheese
- bacon bits
- chopped green onions
Instructions
- Quarter potatoes, making sure pieces are smaller than 1 inch. Toss with oil, garlic and herb seasoning, and salt and pepper to taste. Portion out between four 12×12 inch pieces of foil.
- Fold foil packs closed, pinching edges to seal. Grill over medium high heat for about 20 minutes, turning over every 4-5 minutes until potatoes are tender and cooked through.
- Open packets, top with sour cream, cheese, bacon, and green onions as desired and serve.
Can I bake these in the oven?

Tk cook in the over , do you have to do foil packs or can you just cook in casserole dish?
You can do a casserole dish, covered with foil on top.
