I’m on a crepe kick! I mean, how can I not be? They are so easy to make, one batch of batter makes a good amount, and my kids and husband just love them so why not keep on crepe’ing on? Right?
The best part about crepes is one batter, so many fillings! Kind of like pancakes. Well, exactly like pancakes, because a crepe is essentially just a very, very thin pancake that you stuff and top with all kinds of good fillings, like this cream cheese and sour cream crepe filling.
Plus, this sweet crepes filling makes perfect use of overripe bananas and other pantry staples. Crepes also make a great surprise breakfast when you’re bored of the same old, same old. Surprise your loved ones this weekend with a delicious crepes breakfast!

- Cream cheese
- Sour cream
- Powdered sugar
- Vanilla extract
- Bananas
- Brown sugar
- Butter
- Cinnamon
Here’s How You Make it
Ready for a simple-yet-impressive breakfast? Making this banana crepe filling is super easy, and you could even make it the night before if you want to speed up your crepe filling (and devouring) process.
- In a medium bowl, mix together the cream cheese and sour cream, followed by the powdered sugar and vanilla.
- Then, in a skillet, melt the butter over medium heat. Once the butter is melted, add the brown sugar and cinnamon. Keep stirring the butter/sugar/cinnamon mixture until the sugar begins to caramelize.
- Now, add the bananas by gently stirring them into the butter mixture, cooking for 2-3 minutes until they are caramelized. Take them off of the heat once this occurs.

What to do with Excess Bananas
We’ve all been there…staring at a big bunch of bananas wondering what to do with all of them. Or hoping you can get enough people in your house to eat the ones that are turning brown because you can’t (I hate eating brown bananas).

Banana Crepe Filling
Ingredients
- 4 ounces cream cheese
- 1 cup sour cream
- 1 cup powdered sugar
- ยฝ teaspoon vanilla extract
- 2 medium bananas - sliced
- ยฝ cup brown sugar
- 4 tablespoons butter
- ยฝ teaspoon cinnamon
Instructions
- In a medium bowl, cream together cream cheese and sour cream.
- Mix in powdered sugar and vanilla. Set aside.
- In a medium skillet, melt butter over medium heat.
- Add brown sugar and cinnamon and stir until brown sugar begins to caramelize.
- Gently stir in bananas and cook for 2-3 minutes are caramelized. Remove from heat.

hii it looks very yummy so i wanted to try making it but just want to know how many servings can the above recipe make?
Made as listed is 12 crepes. I would serve 2crepes/person.
Could I use this filling for a cake?
I’ve never tried that but I think it would taste delicious!
