- Shallot: This adds a lot of flavor and aroma! I like to chop mine pretty small so that it doesn’t change the texture of the sauce that much.
- Salt & Pepper: To taste!
- Heavy Cream: Heavy cream is key for a creamy sauce!
- Blue Cheese: Blue cheese crumbles will melt into the sauce seamlessly.
- Worcestershire Sauce: Worcestershire sauce adds a slight tang and extra umami flavor!
- Garlic Powder: I like to add a little garlic powder for some extra flavor as well.
- Chopped Chives: Top the sauce off with freshly chopped chives!

Step by Step Instructions
- Melt Butter & Sautรฉ Shallot: Melt the butter in a medium saucepan over a medium heat. Add the shallot with a pinch of salt and gently cook for about 5 minutes until soft and just starting to color. (photos 1-2)
- Create Sauce: Splash in the apple cider vinegar and allow it to bubble for one minute before stirring in the heavy cream, half the blue cheese, Worcestershire sauce and garlic powder. Once the mixture is bubbling, allow to cool for 5 minutes so that the cheese melts and the sauce thickens. (photos 3-4)
- Add Remaining Ingredients: Remove from heat and stir in the remaining blue cheese and the chives. Season to taste with salt and pepper, and serve immediately! (photos 5-6)

- For extra flavor, pan sear your steak in the same pan that you plan to make the sauce! You can keep the brown bits that come off the steak in the pan and they will end up adding loads of flavor to the sauce.
- For a thicker sauce, keep stirring and cook at a low simmer until the sauce has reduced slightly and thickened! If the sauce is too thick, add a splash of milk or even lemon for a slightly lighter flavor!
- Serve this blue cheese steak sauce with steak and potatoes and your choice of vegetable, or even pair this with leaner meats like chicken with garlic herb butter!

Oh my! This sounds divine! In addition to steak, if allowed to thicken a bit do you recommend it for a grilled burger spread? I’ve ordered blue cheese burgers, so when I saw this recipe the idea popped into my head.
There is a reference of white wine. No picture of wine with rest of ingredients. And. nothing noted about white wine in instruction or in the ingredient list at the end.

This was so good! I didnโt have apple cider vinegar and subbed for red wine vinegar, and it came out so good! Served it over steak and herbed potatoes. Will definitely make it again.
