It feels like Summer at my house. The kids and I are spending our afternoons in the backyard running through the octopus sprinkler and slurping down ice pops like there’s no tomorrow. My farmer’s tan is going strong already and It’s not even June.
One of my favorite parts of Summertime is eating outdoors. We’ve dusted off the patio furniture and have been firing up the grill non-stop the past few weeks. Our first backyard bbq of the season with a few extended family members was a couple weeks ago and I’m itching to have another! I made this Berry Cheesecake Salad the other day and I am hooked.

Berry Cheesecake Salad
Ingredients
- 1 cup whole milk
- 1 3.4 oz package cheesecake instant pudding
- 1 8 oz container cool whip topping
- 4 cups sliced strawberries
- 1 cup blueberries
- 1 cup raspberries
- 1 cup blackberries
- 3 cups mini marshmallows
- ยฝ cup chopped pecans or walnuts - optional
Instructions
- In a large bowl combine milk and pudding mix. Mix until smooth and pudding sets up (2-3 minutes). Stir in cool whip topping until smooth.
- Gently fold in all of the berries, and then the marshmallows and nuts (optional). Serve immediately, or cover and chill up to 8 hours before serving.
Hello, was wondering if I could replace cool whip with real cream instead, would it have same consistency for the recipe to look as good as it does.
If you whip the cream yourself it will have a similar consistency.
