My favorite thing about this chowder is using both cream style corn and whole kernel sweet corn. That combination gives this soup it’s perfect texture.

Leftover Turkey Corn Chowder
Ingredients
- 2 cups shredded leftover fully cooked turkey - (may sub shredded leftover fully cooked chicken)
- 2 15-ounce cans cream style corn
- 1 15-ounce can sweet yellow whole kernel corn
- 3 cups low sodium chicken broth or vegetable broth
- 1 celery rib - chopped
- 1 red bell pepper - diced
- 2 cups cubed golden or red potatoes
- 1 ยฝ teaspoons Italian seasoning
- 1 teaspoon garlic powder
- salt and pepper to taste
Instructions
- In a large stock pot combine cream style corn, whole kernel corn, broth, celery, bell peppers, potatoes, Italian seasoning, and garlic powder.
- Cover and simmer over medium heat for 20-25 minutes until potatoes are tender and easily pierced with a fork.
- Stir in turkey and season with salt and pepper. When turkey is heated through, serve and garnish with fresh parsley or thyme as desired.
Just made this with leftover Thanksgiving Turkey for a football party this afternoon. Made a double batch. Can’t wait for the party. I think I will have a bowl for lunch. It is delicious! Thank you for a fabulous recipe. I will make it again.
This soup is so delicious! It says it makes 4 servings- what size is a serving?
I added onion in the beginning and a splash of half and half at the end, just because I had some in the fridge. Recipe is easy, and turned out great. Good way to finish off Thanksgiving turkey instead of losing it in the freezer!
Can you pressure can this soup?
I have not tried that, I can’t say for sure! Sorry. I would love to hear the outcome if you do.
The canned cream style corn is a concern if you plan on pressure canning this chowder (because some brands contain dairy). An alternative would be to double the amount of regular canned (or frozen) corn, but pulse half the corn in a blender a few times to mimic the change in consistency that you get from using creamed corn.
I would also refrain from adding the salt & pepper. It’s better to salt/pepper to taste after opening a jar of canned soup because the canning process can impact the concentration / perception of salt and pepper.
Other than that, I see no issues with pressure canning this chowder. I plan on doing so this coming weekend.
I found it a little bland so I added some half &half and a some rich broth I saved from roasting my turkey. It really improved the flavor.
