The ultimate campfire treat: toasted marshmallow goodness sandwiched between homemade caramel coconut Samoa girl scout cookies!
I sort of have that guilty feeling like I’m cheating a little bit. This recipe can hardly be called a recipe since I just posted the real, legitimate, easy peasy homemade Samoa cookie recipe just yesterday. But when inspiration strikes, one must create, and when creation this life-changing has occurred, sharing is essential.
If you follow me on Instagram (follow me!!!) then you probably saw my IG pic last week from our camping trip. The one with an ooey gooey s’more made with my all time favorite Samoa girl scout cookies. I’ve tried A LOT of s’more combinations in my day, some wonderful, some less than wonderful. . . ( peanut butter + oreo = WINNER! cinnamon banana = not so stellar. ) . . . but this Samoa idea, wow. Wowwwwwwwww. Insane. Out of this world good. I can’t. get. enough.
I owe my brother in law for the true inspiration for these homemade versions though. I was sitting there by the campfire with half my face covered in sticky marshmallow goo, when he said “So is it blog-worthy?” And I said YES! That was when I decided I was going to make homemade Samoa cookies and then I was going to turn them into s’mores. Absolute genius – one of my finest moments I must say. These are outrageously good, the cookies are even better than the originals with extra richness! Caramel + coconut + chocolate + shortbread + toasted marshmallows = pure bliss my friends, pure. ***bliss***
Samoa S’mores
Ingredients
- homemade Samoa cookies - (click HERE for my easy peasy recipe!)
- marshmallows
Instructions
- Toast marshmallows. This can be done by roasting them over an open fire, OR microwaving them on high for 8-10 seconds, OR roasting them over a grill or gas stove, OR broiling them on a baking sheet in the oven for about 1 minute until golden brown (watch closely as they will burn easily!).
- Place one Samoa cookie upside down. Place a toasted marshmallow on top of the upside down cookie. Top marshmallow with a second samoa cookie (right side up) and press down gently to squish the toasted marshmallow between the cookies. Enjoy!
I haven’t had a s’more yet this summer, can you believe that??? These gooey pieces of heaven may be the perfect place to start!
