Skillet Caramelized Pineapple Sundaes simmered in a cinnamon caramel sauce, served with coconut and macadamia nuts make for the perfect tropical treat!
Are you ready for one thousand photos of the most amazingly caramel-y sweet tropical dessert you’ve ever witnessed in your entire lifetime??

This is something that happened sort of kind of a little bit by accident. Eight a.m. rolled around and I was in the kitchen, excited to make that amazing slow cooker pineapple salsa chicken I shared with you the other day (ohmagosh. that stuff. so good!) but then realized I was missing an integral ingredient. {Hand to forehead.}
So there I was, wanting to make pineapple salsa chicken but instead found myself in a staring contest with a pineapple. A big, juicy, perfectly ripened pineapple and there was no way on this green earth I was about to let that beauty go to waste. Plus I already had my hair in a topnot sooooo yeah. There’s that.
Have you been to a Brazilian grill before? Rodizio’s or Tucanos maybe? I’ve been to both and love them both but I favor Tucanos a little bit. I’m biased though – Tucanos was the location for our wedding luncheon so obviously it wins for having sentimental value.
Anyway. If you’ve been to a grill like that then I have to assume you tried the grilled pineapple. And by tried I mean had no less than seventeen slices because that stuff is mind numbingly delicious.
Well this is a lot like that…. but butter. Because not only does it get the grilled flavor, but the pineapple becomes caramelized in a sweet brown sugar and cinnamon sauce that will make you want to cry tears of joy when you taste it.
After you caramelize the pineapple, you top it with a big scoop of creamy vanilla ice cream and have I mentioned lately how much I love that warm-cold combo in desserts?? Seriously I love it. Ice cream on a warm brownie is one of my favorite things ever ever ever. So cold and creamy vanilla ice cream on a warm, caramelized pineapple??
My personal heaven.
But it gets BETTER. I know. Hard to believe.
But when you top the ice cream with toasted coconut flakes, chopped macadamia nuts, and then drizzle more of that pan sauce right on top you will be in paradise people. Paradise.
Oh did I mention this whole thing just takes 20 minutes (if that!) to whip up?? It’s crazy easy and crazy delicious so pleeeeeease do yourself a ginormous favor and treat yourself and your loved ones to some skillet caramelized pineapple sundaes. You will thank me, I guaran-dang-tee it.

Skillet Caramelized Pineapple Sundaes
Ingredients
- 4-6 fresh pineapple rings - 1-inch thick (see note)
- 4 tablespoons butter
- ยฝ cup brown sugar
- ยฝ teaspoon ground cinnamon
- vanilla ice cream
- ยผ cup shredded coconut flakes
- โ cup macadamia nuts - roughly chopped
Instructions
- Add coconut flakes to a large nonstick skillet and saute over medium-high heat for 3-4 minutes until edges begin to brown. Transfer to a bowl or plate and set aside.
- Add butter to the pan and stir until melted. Add brown sugar and cinnamon and stir until dissolved and mixture is thick and saucy.
- Place pineapple rings in the skillet in a single layer so they aren’t overlapping. Cook 2-4 minutes on each side until hot throughout and very tender.
- Remove from heat and top each pineapple ring with a scoop of vanilla ice cream. Spoon some of the pan sauce over the ice cream and sprinkle with coconut flakes and chopped macadamia nuts. Serve immediately.

Oh my gosh, I am dying over this one Tiffany!! I love going to Tucanos just for the grilled pineapple – okay, the other stuff is so good too. But I can’t wait to try this! Topping it with ice cream and macadamia nuts and coconut? I’m seriously drooling girl!
