Ingredients
1cuplong grain white rice
2tablespoonsbutter
1teaspoonground cumin
½teaspoon chili powder
½teaspoonsalt
½teaspoononion powder
8ouncestomato sauce
2cupschicken broth
Instructions
In a large skillet (one that has a lid) over medium heat, melt butter.
Stir in cumin, chili powder, salt, onion powder and rice for 1-2 minutes.
Whisk in tomato sauce and chicken broth.
Bring a boil, then reduce to a high simmer.
Cover and cook for 25 minutes (see note).
Uncover, fluff with a fork, and serve.
Notes
*Vegetarian option: sub vegetable broth for the chicken broth*When simmering the rice - if you are not using a good nonstick pan, be sure to give it a stir every 5-10 minutes to keep it from sticking to the bottom of your pan.
