Creamy cauliflower and sharp cheddar soup you can whip up in less than 30 minutes. This stuff tastes so close to the original Zupas Wisconsin Cauliflower Soup recipe!
Zupas is a long standing tradition in our house. For years we’ve been eating at Zupas before every BYU home football game so as you can see, I’ve had it many many times. In fact, I’ve been eating at Zupas for so long that I actually have to special order my favorite sandwiches because they’ve changed the menu so many times. The California Turkey is still on the menu from years ago but they’ve changed it here and there. They used to grill it panini-style and it came with ranch sauce and sprouts. Like I said it’s changed a lot, so nowadays I have to order the “Cali Old School”.
Not gonna like, I kind of feel like a thug when I order the old school.
For the first, oh, hundred times I ate at Zupas I ordered the California Turkey sandwich with Clam Chowder. I loooove clam chowder. But eventually I had to switch things up. I’ve not tried nearly all of their salads, and a few I created myself, as well as each and every soup on the menu. Since my husband always orders the clam chowder now, I feel like I can get something else and still steal a few bites of the chowder. I go back and forth between the Chicken Enchilada and the Wisconsin Cauliflower. The creaminess and cheesiness of the cauliflower soup is unbeatable. And I’ve gotta say, this recipe is crazy close to the real deal. It’s quick and easy to whip up on a busy weeknight so put it on your menu pronto, you’re gonna love it!
What people are saying about Zupas Wisconsin Cauliflower Soup
“Super good!!! My whole family loves it. It isnโt grainy if you let it simmer until fork tender. I simmered mine for about 20 minutes. Iโve made this recipe twice. Super good both times.” – Shelley
“Delicious! I just made it for a second time tonight for dinner! Itโs a big hit here with my neighbors in Saratoga! I made some slight changes: replaced 1/2 cup of white cheddar for medium(yellow) cheddar, added ground mustard and black pepper to taste. So easy and tastes delicious in homemade bread bowls! An instant family favorite! Thanks for sharing!!!!” – Ashley

I just ate at Zupas in Spanish Fork Ut. They have changed their soup recipes to be more “healthy”. The were awful. They were not creamy but very watered down. I wo’tt be going back. I’m going to try your recipe. I think it will be better. Carie
I KNOw?! Their soups are half as thick as they used to be. ๐

Any SUBSTITUTES for milk? I cannot have milk. Thank you.
Can you use a different type of milk that is non dairy?? That would be my first suggestion as an alternative. If you can’t do ANY type of milk, I guess water will have to do but keep in mind it will be far less creamy if water is used.
Thank you for this recipe. Since moving to Tampa Florida from Salt Lake City Utah, one thing I miss terribly is Zupas Wisconsin cauliflower soup. So I decided to Google a recipe and found this one and decided to try it. But as I always do with recipes I improvised. Instead of cauliflower I substituted spaghetti squash. I also used Cabot’s lite 50 cheeses to Try and make it a tad bit healthier. Before adding the cheese to the Blended soup I strained it through a fine mesh strainer and added a dash of smoked paprika to finish mine off. So smooth and creamy and a fantastic fall flavor. Thank you for the inspiration.
Yum! That sounds delicious- thanks for sharing!
